Recipe 1: March 27th, 2020

Potatoes and Curried Carrots

​

Ingredients

6 medium size potatoes

3 medium to large carrots

2 tablespoons coconut oil

1 teaspoon turmeric

1 -2 tablespoons curry (to your taste)

large piece of fresh ginger

¼ teaspoon salt

¼ teaspoon pepper

 

Recipe

1.     Cut potatoes into cubes

2.     Cut carrots in thick slices

3.     Cut fresh ginger in small pieces

4.     Add coconut oil to pan, let it get hot

5.     Add carrots

6.     Add ginger and spices and cook the carrots on low flame for 10 minutes, mixing regularly so they don’t burn

7.     You can add a small amount of water if you are worried they will burn

8.     Add potatoes to carrots, let cook for 20 minutes or until soft

9.     Serve alone as a snack, with a salad for lunch, or alongside a main dish for dinner.
